Healthy Double Chocolate Muffins

Healthy Double Chocolate Muffins…yum!
These are made with almond flour, flax eggs (say what???), and ground dates for sweetness…vegan, gluten free, fudgy and dare I say healthy?

To make these delicious HEALTHY muffins:

Make 3 flax eggs (combine 3 tbsp ground flaxseed with 8-9 tbsp warm water- mix together and let sit for 15 minutes while you prepare the other ingredients)

Line a muffin tin with liners (this recipe makes 9 muffins) and pre-heat the oven to 350.

Whisk together 1 cup almond flour, 3-4 tbsp unsweetened cocoa powder, 1/2 tsp of cinnamon, 1/2 tsp baking soda, pinch of salt in a bowl.

In a blender combine: 1 cup of pitted medjool dates (about 10-12 dates), 1/4 cup water, flax eggs, 2 tbsp melted coconut oil that has cooled slightly, and 1 tsp vanilla extract. Blend until all combined- add more water a little at a time if having trouble blending. Pour the liquid ingredients into the dry and stir to combine (mixture will be kind of thick). Fold in chocolate chips (I used Trader Joes 75% dark chocolate chips). Scoop the mixture into the muffin tins, sprinkle a few chocolate chips on the top of each muffin. You can add chopped pecans if you want crunch!

Bake for 22-26 minutes or until a toothpick comes out mostly clean.
